Tisbury, Massachusetts, a small town of about 5,000 people on an island off the east coast. Tisbury is the hometown of Noah Mayrand, owner and operator of Tisbury Oyster Company. Noah grew up on Martha’s Vineyard, sailing and fishing on its amazing waters. Through life he also traveled far and wide as a professional cook, artist and jack of all trades. In 2015, he started working on a dream of becoming an oyster farmer.

In May of 2022, Noah launched the very first oyster gear into the waters of Tisbury. After many years of planning and careful consideration, the ability to start a farm was granted by the powers that be. This would be the start of a future of aquaculture for the first time in Tisbury’s history.

The Tisbury Lagoon Pond is a very special inlet rising from the heart of the vineyard, surrounded by ancient springs and beautiful wooded areas. The farm sits just off of Oklahoma Springs and 500 yards north of The Water Works where spring water has been leading herring to spawn for centuries. At the head of the pond, It is a well-protected area providing excellent food and conditions for oysters to thrive. The water’s depth ranges from 16 - 28 feet on site, allowing for vertical farm techniques to be used from surface to bottom.  

The unique qualities of this saltwater inlet provide a distinct merroir to all of its shellfish. With a large natural flowing spring at the head, just 500 yards from the farm. Fresh water from the heart of the island is pushed over the surface of the farm daily, blending with the Vineyard Sounds' swift currents. This creates a truly nuanced flavor for a crassostrea virginica oyster.
